Calkins & Burke were among the first to identify Southeast Asia as having the ideal climate, growing conditions, and economic environment for pineapple. As our primary source, we've been there for over forty years, and our infrastructure and key alliances have put us in a position to deliver a product that leads the market in both quality and consistency. Crop management is extremely important with planting pineapple, as it takes 18 months to bear the first fruit, and twelve months for subsequent crops. Fortunately, our experience and careful coordination with the packers allow us to guarantee a year-round supply. Pineapple is a highly labor-intensive product that is hand picked in the field at the peak of freshness. Upon arrival at the factory, the pineapple is washed, graded for size, freshness, and maturity, and inspected for quality. It is then peeled and cored by the JANAKA machine, hand trimmed, and again inspected and graded for color and workmanship, with all defects removed. Because color can vary across the fruit, each slice of pineapple is carefully inspected and graded to ensure a consistent final product. The fruit is then produced as sliced, chunked, tidbits, crushed, pizza cut, 100% pure pineapple juice, and pineapple concentrate. In addition to traditional cans, we also offer two new packages for retail and food service: a plastic cup, and a shelf-stable pouch. We at Calkins & Burke believe that our stringent plant audits, long-standing
relationships, and exacting inspections of both the plant and the final
destination help us to produce a product that is as close to fresh cut
as possible, with a golden yellow hue, a combination sweet/tart flavor,
and a high level of vitamin C.

One of our products showing a huge growth in popularity is the mandarin. Although generally considered an orange, the Mandarin is, in reality, a HESPARIDIA, a type of berry. Either way this citrus fruit is delicious and popular all over the world. Mandarin oranges are hand picked at the peak of freshness from November to March. This requires careful coordination in order to ensure year-round availability. Upon arrival at the plant, the mandarin oranges are graded for size, ripeness, and quality, and then carefully washed, peeled, and segmented, removing the seeds and membrane, or fiber strands. Prior to packing, the peeled fruit is again graded for uniformity in size, and is washed and sanitized. Our product is premium quality, and consists of whole, peeled segments of mandarin oranges, packed in your choice of light sugar syrup, natural orange juice, or pear juice, with a color that is typically bright orange. Mandarin oranges are very adaptable. Use them in salads, baking, deserts, ethnic dishes, or on their own. They're also low in fat, convenient, and versatile, qualities that are contributing to the mandarin's increased consumer acceptance.
